Tasting Note
Deep ruby; spiced plum, red currant and dark cherry with savoury leather, mushroom, cinnamon and crushed thyme. Silky, fine-grained tannins, concentrated core and integrated acidity deliver a luxurious mouthfeel and long, harmonious finish.
Food Pairing
Western: roast duck, mushroom risotto, lamb loin, pork belly, aged cheeses. Asian: Peking duck, char siu, miso-glazed salmon, grilled shiitake with soba, Korean BBQ. Balanced acidity and savoury notes suit both earthy and umami-rich dishes.
Production Method
Selection from oldest ungrafted vines; ~40% whole-bunch fermentation, cool soak and spontaneous indigenous yeast fermentation; gentle plunging, short post-fermentation maceration; matured 14 months in French oak barriques (~40% new); natural malolactic.
