Tasting Note
Deep ruby with garnet edge. Aromas of raspberry, plum and pomegranate with savoury notes of pepper, cinnamon, porcini and black olive. Opulent, textured palate with velvety tannins, fresh acidity and a long, layered finish.

Western: roast duck, beef wellington, herb‑crusted lamb, wild mushroom risotto. Asian: Peking duck, char siu pork, miso‑glazed eggplant, shiitake and soy braised dishes, Korean BBQ short ribs.
Production Method
Traditional Burgundian methods: partial whole‑cluster (≈33%), indigenous yeast fermentation, gentle plunging, extended post‑fermentation maceration; pressed to French oak barriques (30% new) and matured 18 months with natural malolactic fermentation.

Family‑owned Pegasus Bay (Donaldson family) estate in Waipara. Established 1986; vines include 30+ year‑old plantings. Prima Donna is the estate’s reserve barrel selection made only in exceptional vintages.
