Tasting Note
Deep ruby with vibrant red and dark fruits—raspberry, plum and pomegranate—plus savoury notes of mushroom, truffle, black olive and warm spice. Velvety tannins, bright acidity and a long, layered finish.

Roast duck, lamb racks, wild mushroom risotto, beef short ribs, charcuterie; Asian pairings: Peking duck, char siu, miso-glazed mushrooms or salmon, teriyaki beef, Korean bulgogi.
Production Method
Traditional Burgundian methods: ~1/3 whole-bunches, remainder destemmed, cool soak, natural fermentation with gentle plunging, extended post-fermentation maceration; 18 months in French oak barriques (30% new), followed by malolactic fermentation and bottle ageing.

Family-owned Pegasus Bay (Donaldson family), established 1986. Estate vines on free-draining north-facing Waipara terraces, many 30+ years old; low-yield, cool-night mesoclimate producing concentrated, ageworthy fruit.
