Tasting Note

Deep ruby; fragrant, earthy nose of cherry, dark plum and pomegranate with mushroom, tanned leather, hazelnut and violet. Silky, finely textured palate, brisk acidity, ripe integrated tannins and a long, focused finish.


Food Pairing

Western: roast duck, herbed lamb, venison, mushroom risotto, aged Brie. Asian: Peking duck, teriyaki or soy‑glazed salmon, char siu, miso mushroom dishes, Korean BBQ.


Production Method

Traditional Burgundian methods: ~40% whole-bunch, cold-soak, natural fermentation with gentle plunging, extended post-ferment maceration, then 15 months in French oak barriques (≈30% new); natural malolactic fermentation and blending of multiple clones/blocks.

Family-owned Pegasus Bay (Donaldson family) established 1986; old vines (~25–30+ years) on free‑draining Glasnevin gravels in sheltered north‑facing terraces of Waipara Valley.
