Tasting Note
Deep ruby with boysenberry, black cherry and cacao, underpinned by savoury notes of truffle, roast game, leather and cinnamon. Decadent, supple palate with fine-grained tannins, zippy acidity and a long, succulent finish.
Food Pairing
Western: roast duck, herb-crusted lamb, mushroom risotto, pork loin. Asian: miso-glazed salmon, yakitori, char siu pork, grilled shiitake with soy, duck pancakes.
Production Method
Traditional Burgundian methods: approx. 40% whole-bunches, cool pre-fermentation, wild/natural fermentation, 7–15 day post-fermentation maceration, maturation ~15 months in French oak (≈40% new), natural malo-lactic fermentation.
