Tasting Note

Rich, layered Chardonnay: white peach, nectarine, lemon curd, flint and lightly charred oak. Dense, textured palate with vibrant acidity and a long, savory finish.

Roast chicken, grilled/poached salmon, buttered lobster or scallops, creamy pasta or risotto; Asian: miso‑glazed cod, seared scallops with soy‑ginger, roasted pork belly, tempura or richer sushi.


Production Method

Hand‑picked fruit, gently foot‑trod; free‑run, non‑clarified juice fermented in large French oak puncheons (70% old, 30% new) with indigenous yeasts; matured ~12 months sur lie with partial spontaneous malolactic fermentation.

Family-owned Pegasus Bay (Donaldson family), established 1986. Vineyards on Glasnevin gravels in Waipara; many vines 30+ years, low-yielding own‑rooted plantings.
