Tasting Note
Bright red cherry and strawberry with dried orange peel, Mediterranean herbs, sweet spice and slate minerality. Round, juicy palate with grainy tannins and a long savory finish.

Food Pairing
Roasted lamb, grilled skirt steak, mushroom risotto, Spanish tapas and paella; Korean BBQ, Sichuan-style pork, char siu, grilled teriyaki meats.

Production Method
Hand-harvested old-vine Garnacha; indigenous yeast fermentation in large open-top foudres; aged ~6–12 months in 500–600L French oak, amphorae and stainless; minimal sulfur, bottled unfiltered.
