Tasting Note
Perfumed with violet, wild cherry and red-berry fruit, backed by slate-driven minerality, talc-like tannins, bright acidity and a long, saline finish.

Food Pairing
Roasted lamb, grilled pork, mushroom risotto, aged Manchego or sheep's cheese; Asian pairings: Korean BBQ, char siu (Cantonese roast pork), yakitori, mildly spicy Sichuan noodles.

Production Method
Organic, bush-trained old-vine Garnacha; indigenous-yeast fermentation; aged 24–30 months in 500–600L French oak; low-intervention, minimal sulfur.
