Tasting Note
Perfumed Garnacha with raspberries, black cherry, hibiscus, lavender and garrigue; slate-driven minerality, savory herb notes, juicy acidity, round fine tannins and medium–full body with a lingering, spice-tinged finish.
Food Pairing
Western: roasted lamb, grilled beef, venison, stews, aged Manchego and sheep’s milk cheeses. Asian: Peking duck, char siu, Korean BBQ, spicy Sichuan beef, mushroom stir‑fries and savory yakitori.
Production Method
Hand‑harvested old‑vine Garnacha; organic, low‑intervention farming. Fermented with indigenous yeasts and aged ~12 months in used French oak barrels; minimal sulfur at bottling.

Telmo Rodríguez’s Pegaso project; recovered 1953 Garnacha on steep, south‑facing red‑slate slopes in Arrebatacapas. Small-production, artisanal bottlings (1,474 bottles for 2020).
