Tasting Note

Ripe plum, black cherry and blueberry with violets, dark chocolate, graphite and espresso. Polished, firm tannins, bright undercurrent of minerality and a long, savory finish with truffle and black-tea notes.

Western: roast leg of lamb, braised short ribs, beef Wellington, aged hard cheeses. Asian: Peking duck, char siu, beef rendang, mushroom or beef hot pot (shiitake/soy).


Production Method

Hand-harvested; destemmed with minimal crushing; parcel/ gravity fermentation on indigenous yeasts; malolactic in barrel; 16–20 months in new and one-year-old oak.
