Tasting Note

Tart, leafy and herbal character with cedar, spicy notes and hints of green. Earthy, rustic profile with bright acidity and a short-to-medium, slightly drying finish; subdued tertiary aromatics from advanced age.


Food Pairing

Western: roasted lamb, beef rib, mushroom risotto, aged hard cheeses. Asian: Peking duck, char siu, braised beef short ribs (Korean/Japanese), shiitake mushroom stir-fries.


Production Method

Traditional Saint-Émilion vinification: hand-harvested, fermented in wooden vats with ~3 weeks maceration, malolactic in barrel and aged in oak (months to years) before bottling.

Small 3.5–3.65 ha estate on the limestone plateau of Saint-Émilion. Detached from Pavie in 1885; Grand Cru Classé (1954). Owned by Gérard Perse since 1997; known for Merlot-dominant, ageworthy wines.
