Tasting Note
Deep ruby with Bing cherry, wild mountain berry, pomegranate and damp earth. Coastal salinity and oyster-shell minerality underpin silky texture, bright acidity and gently chalky tannins, finishing long with spice and floral perfume.
Food Pairing
Western: roast duck, mushroom risotto, grilled salmon, roasted chicken, aged soft cheeses. Asian: miso‑glazed black cod, Peking duck, teriyaki salmon, soy-braised pork belly, shiitake or enoki mushroom stir-fry.
Production Method
Hand-sorted fruit; a percentage whole-cluster; indigenous yeast fermentations in small open-top stainless tanks; 5-day cold soak, 15-day maceration; gentle punchdowns; spontaneous malolactic in barrel; ~11 months in French oak (c.27% new); bottled unfined and unfiltered.
