Tasting Note
Violet-edged ruby with aromas of pomegranate, dark cherry, bergamot and black tea. Silky texture, boysenberry and sage notes, bright acidity and fine-grained tannins, finishing long with red-clay minerality and a hint of orange peel.

Western: roast duck, mushroom risotto, grilled salmon, herb‑crusted lamb. Asian: miso‑glazed black cod, char siu pork, teriyaki chicken, mushroom hot pot (nabe) or Korean bulgogi.

Production Method
100% Pinot Noir; hand‑harvested and sorted cold; partial whole‑cluster; indigenous yeast fermentation in small open‑top stainless tanks; 5‑day cold soak, ~15‑day maceration; spontaneous ML in barrel; aged in new and neutral French oak; bottled unfined/unfiltered.
