Tasting Note
Perfumed violets, wild cherry, raspberry and Earl Grey/black tea with dried herbs, cedar and savory underbrush; silky texture, bright acidity, minerality and a very long, satiny finish.

Food Pairing
Western: roast duck, duck à l'orange, mushroom risotto, pork tenderloin with herb jus, grilled salmon. Asian: Peking duck, char siu (Cantonese BBQ pork), miso‑glazed black cod, teriyaki salmon, shiitake and tofu hot pot.

Production Method
Hand‑harvested; ~10–14% whole‑cluster; indigenous yeast fermentation in small open‑top tanks with cold soak and extended maceration; spontaneous malolactic; ~15 months in French oak (c.40–53% new); bottled unfined/unfiltered.

Paul Hobbs Winery (est. 1991). Katherine Lindsay Estate (purchased 1998) is the home estate in Laguna Ridge (13.3 planted acres); clones include Calera and Swan; Cuvée Agustina is a selected-block flagship Pinot from this site.
