Tasting Note

Perfumed and layered: red and black cherry, boysenberry, lavender, bergamot, tea and savory herbs, with earthy mushroom and mineral notes. Silky texture, bright acidity and a long, precise finish.

Western: roast duck, coq au vin, mushroom risotto, roast squab, grilled salmon. Asian: Peking duck, miso‑glazed black cod, char siu pork, shiitake and bok choy stir‑fry.


Production Method

Hand‑harvested and cold‑sorted; small open‑top fermentations with indigenous yeasts, short cold soak and extended maceration, partial whole‑cluster, spontaneous MLF in barrel; aged in French oak; bottled unfined and unfiltered.
