Tasting Note

Perfumed red and black cherry, raspberry, violet and bergamot with hints of forest floor, red‑clay minerality and subtle spice. Silky texture, fine‑grained tannins, bright acidity and a long, lifted finish.


Food Pairing

Western: roast duck, pork tenderloin, mushroom risotto, grilled salmon, charcuterie and soft cheeses. Asian: Peking duck, miso‑glazed black cod, teriyaki salmon, Korean bulgogi, shiitake soba and Cantonese roast pork.


Production Method

100% Pinot Noir; hand‑sorted, partial whole‑cluster inclusion, fermented on indigenous yeasts in small open‑top stainless tanks; 5‑day cold soak, ~15‑day maceration, spontaneous malolactic in barrel; aged in new and neutral French oak; bottled unfined/unfiltered.
