Roasted chicken, lobster with beurre blanc, creamy mushroom risotto; seared scallops, miso-glazed black cod, sushi (fatty cuts), pork belly, Thai coconut curry.
Production Method
Barrel-fermented and aged on the lees in French oak (approx. 16–18 months) with a portion in new oak and gentle malolactic influence; minimal intervention to showcase site.
