Tasting Note

Bright golden-yellow. Aromas of pear, lemon meringue and white flowers; palate shows citrus, quince, brioche, toasted spice and chalky minerality. Refined texture, lively acidity and a long, spicy finish.


Food Pairing

Western: roast chicken with herb butter, lobster or crab with beurre blanc, creamy pasta, seared scallops, mushroom risotto. Asian: miso-glazed black cod, tempura prawns, sushi (fatty tuna), light Thai coconut curry, Cantonese roast pork.


Production Method

Whole-cluster cold pressing; barrel fermentation (French oak) with indigenous yeasts; spontaneous malolactic fermentation in barrel; sur lie aging with biweekly bâtonnage; ~15 months in French oak (≈50–55% new); bottled unfined and unfiltered.

Richard Dinner Vineyard is a longtime Paul Hobbs site on Sonoma Mountain (hillside, northern exposure). Soils: clay loam, gravel and volcanic tuff. Clonal selection: Old Wente, 72. Paul Hobbs founded his winery in 1991 and has produced this bottling since inception.
