Tasting Note

Perfumed and layered: jasmine, apricot, Meyer lemon, white peach, honeyed citrus, toasted spice and saline minerality. Creamy texture with vibrant acidity and a long, brioche-tinged finish.

Western: roast chicken, beurre blanc seafood, creamy pasta, crab cakes. Asian: miso‑glazed black cod, tempura prawns, sushi (fatty tuna), Thai coconut chicken curry.


Production Method

Whole-cluster cold-pressed; barrel-fermented (French oak, ~53–55% new); indigenous yeasts; spontaneous malolactic fermentation; aged 15 months sur lie with regular bâtonnage; bottled unfined/unfiltered.
