Tasting Note

Dark cassis, wild blueberry and boysenberry with lavender, mocha, cigar box and graphite. Fresh acidity, fine-grained yet firm tannins and crushed-rock minerality lead to a long, savory finish.

Western: grilled ribeye, roast lamb, beef short ribs, mushroom risotto, aged cheddar. Asian: Korean BBQ (bulgogi/galbi), Cantonese roast pork/char siu, Peking duck, beef rendang, Sichuan-style braised beef.


Production Method

Hand-harvested; indigenous yeast fermentations with 5-day cold soak, 28-day maceration; spontaneous malolactic in barrel; aged ~20 months in new and neutral French oak; unfined and unfiltered.

Paul Hobbs Winery (founded 1991). The Nathan Coombs Estate in Coombsville supplies much of the fruit; 2018 was the inaugural Coombsville-labeled release.
