Tasting Note
Deep garnet with aromas of crushed blackberry, wild blueberry, dried herbs, tobacco and mocha. Palate shows red currant, black fig, dark chocolate, fine‑grained tannins, bright acidity and a mineral-driven, long finish.

Grilled ribeye or prime rib, lamb chops, roasted mushrooms, aged cheddar; Asian pairings: Korean BBQ (bulgogi), char siu or Cantonese roast pork, Sichuan pepper beef, Peking duck.

Production Method
Hand-harvested; fermented in small closed-top stainless tanks with indigenous yeasts; 5-day cold soak, ~28-day maceration; gentle pumpovers and délestage; spontaneous malolactic in barrel; aged in new and neutral French oak; unfined/unfiltered.

Paul Hobbs Winery (est. 1991) sources fruit from its Nathan Coombs Estate in Coombsville (purchased 2012). Hobbs focuses on site-driven, minimal-intervention winemaking and has extensive Napa and international projects.
