Concentrated cassis, black raspberry and baked plum with cigar-box, menthol and clove spice; savory herb and crushed-stone minerality, fine-grained grippy tannins and a long, persistent finish.

Hand-harvested and sorted; 5–6 day cold soak with extended maceration, fermented in small stainless tanks (indigenous yeasts), gentle pump-overs/délestage, spontaneous malolactic; aged ~20 months in French oak (predominantly new).
