Tasting Note
Dense cassis, blackberry and dark cherry framed by graphite, cigar box, tobacco and violet florals. Powerful, concentrated mid-palate with savory (forest floor, iodine) undertones and a long, saline-tinged finish.

Dry-aged ribeye, roasted veal, lamb chops, mushroom ragù; Asian: Korean BBQ (bulgogi or galbi), miso-marinated beef, Peking duck, char siu, aged soy-braised short ribs.

Production Method
Hand-harvested fruit; cold-soaked then fermented (small closed-top stainless tanks) with native yeasts; ~30–34 day maceration; spontaneous malolactic in barrel; aged ~20 months in 100% new French oak.
