Tasting Note
Perfumed, saline-tinged chardonnay with panna cotta, yuzu, lilac, green apple, pear and lemon curd. Satiny texture, bright stony acidity and flinty mineral finish; elegant, long, and age-worthy.

West: oysters, scallops, lobster roll, roasted chicken with butter sauce, creamy pasta (fettuccine Alfredo), mushroom risotto. Asian: miso-glazed black cod, seared tuna/sushi (toro), tempura prawns, butter chicken, Cantonese steamed fish.
Production Method
Barrel-fermented and aged in French oak (≈27% new) for nine months; blended from estate parcels with minimal intervention to preserve site expression.

Paul Hobbs acquired the George Menini Estate (former apple orchard) in 2012; planted in 2015 to Chardonnay and Pinot Noir on Goldridge sandy loam (≈39.15 acres) in the Sebastopol Hills.
