Tasting Note
Pale straw; aromas of gardenia, Asian pear, white peach and honey with flinty, sea‑salt minerality and baking spice. Silky texture, weighty mid‑palate, bright crunchy acidity and a saline, lingering finish.
Food Pairing
Western: roast chicken, grilled salmon, buttered lobster, creamy pasta, mushroom risotto. Asian: miso‑glazed black cod, seared scallops with soy‑ginger, sushi (fatty tuna), Thai coconut chicken curry.
Production Method
Dry‑farmed vineyard fruit (planted 2015); matured ~15 months in 30% new oak; careful, minimal‑intervention winemaking with barrel aging to preserve acidity and minerality.
Vineyard Info
Paul Hobbs purchased the George Menini Estate (2012); 39.15 planted acres on Goldridge sandy loam, previously an apple orchard, planted to Chardonnay and Pinot Noir using heritage clones.
