Tasting Note
Pale straw in color with white tea, lemongrass and floral notes. Ripe apple, Asian pear, nectarine and apricot on the palate with lemon rind, toasted almond and baking spice, bright acidity, minerality and a long, seamless finish.

Western: roast chicken, lobster in butter, crab, creamy mushroom risotto, grilled salmon, beurre blanc seafood dishes. Asian: steamed fish with ginger & scallions, sushi/sashimi, tempura prawns, chicken teriyaki, Cantonese white-cut chicken, mild Thai seafood curries.

Production Method
Whole-cluster pressed cold; barrel-fermented in French oak with indigenous yeasts; aged sur lies with bi-weekly bâtonnage; spontaneous malolactic fermentation; selection of new and neutral French oak; unfined and unfiltered.
