Tasting Note
Vibrant, saline Chardonnay with pear, white peach, lemon zest, toasted hazelnut and brioche. Creamy mid-palate, bright linear acidity and a long mineral, citrus-tinged finish.
Food Pairing
Western: seared scallops, roast chicken with herb butter, lobster or creamy pasta, pork belly, soft cheeses (brie, camembert). Asian: miso-glazed cod, sushi/sashimi, tempura, yakitori, lightly spiced Thai dishes.
Production Method
Hand-harvested, whole-cluster pressed; wild/barrel fermentation in barrique (30% new); full malolactic fermentation, periodic bâtonnage and 11 months élevage in oak.

Fruit from Bull Swamp vineyard (planted 1982) near Warragul on deep volcanic soils; P58 clone, dry-grown, north-facing sites. Produced by Patrick Sullivan using low-intervention/biodynamic practices.
