Tasting Note
White blossom, lemon and grapefruit with hazelnut, feijoa and cream. Pristine citrus and orchard fruits, saline mineral grip and fine chalky phenolics; weighty yet vibrant with a long, savory finish.

Western: seared scallops, grilled white fish, creamy pasta, roast chicken, mushroom risotto, soft-ripened cheeses. Asian: sashimi/sushi, miso-glazed cod, tempura prawns, steamed fish with ginger & soy, lightly spiced Japanese or Chinese seafood dishes.
Production Method
Hand-harvested, whole-cluster crushed and gently pressed. Native fermentation in French barriques (≈30% new), full malolactic, periodic lees stirring and 11–12 months élevage in barrique.

Patrick Sullivan — small-batch Gippsland producer. Bull Swamp vineyard planted c.1982 by the Farrington family (P58 clone), dry-grown on deep volcanic soils, north-facing at ~100m elevation.
