Tasting Note

Lime, green apple, marmalade and preserved lemon with brioche, hazelnut and light toast. Intense saline minerality, candied citrus peel and subtle caramel; mouthfilling with crisp acidity and a long, persistent finish.


Food Pairing

Western: grilled or buttered shellfish, roast chicken with beurre blanc, creamy pasta, pork belly. Asian: miso‑glazed salmon, tempura prawns, richer sushi (e.g. salmon/uni), prawn laksa, mildly spiced Thai curries.


Production Method

Whole‑cluster pressing; fermented in barrique (≈30% new); full malolactic fermentation; bâtonnage performed; aged 11–12 months in oak; bottled unfined/unfiltered.

Sourced from the Bullswamp Vineyard (Baw Baw Shire), on volcanic soils. South‑facing, dry‑grown I10V1 clone vines (youngest plantings ~25 years). Produced by Patrick Sullivan, a Gippsland winemaker focused on expressive Chardonnays.
