Tasting Note
Intense ruby with concentrated black and red fruits, dried cherry, licorice, leather, tobacco and dark chocolate. Powerful, savory core with firm, fine-grained tannins and a long, spicy, balsamic finish.
Food Pairing
Western: roasted red meats, braised beef, lamb, game, aged pecorino and parmigiano; Italian: ragu, mushroom risotto. Asian: Korean BBQ, char siu, Peking duck, spicy Sichuan dishes and hoisin-glazed pork.
Production Method
Fermented in stainless steel with long maceration, followed by extended aging (minimum 2–3 years) in large oak casks and tonneaux before bottling. Structured, traditional Aglianico regimen.
Vineyard Info
Paternoster is a family estate from Barile dating to 1925; Don Anselmo is their flagship Aglianico from old vines on Mount Vulture’s volcanic soils. The estate joined Tommasi Family Estates in 2016.
