Tasting Note

Concentrated black-fruit core (cassis, blackberry, plum) with graphite, cedar, tobacco and iodine; ripe, finely grained tannins, bright mineral spine and an energetic, persistent finish.


Food Pairing

Western: roast beef, braised short ribs, lamb, venison, aged hard cheeses. Asian: char siu (Cantonese roast pork), Peking duck, Korean BBQ (bulgogi or galbi), beef rendang, rich Sichuan dishes.


Production Method

Hand-harvested; cold pre-fermentation maceration and extended skin contact; ~18 months ageing primarily in French oak barriques (c.66% new) with a portion in large foudres.
