Tasting Note

Deep black-fruit core of black cherry, cassis and plum with floral lift, cedar, white pepper and iron-mineral notes; medium-full body, firm grainy tannins and a long, spicy saline finish.

Roast lamb, beef tenderloin, duck confit, mushroom risotto; Asian: Peking duck, char siu, Korean BBQ (bulgogi), spicy Sichuan beef.


Production Method

Hand-harvested, berry sorting with some whole clusters/stems included; fermentation in temperature-controlled vats, malolactic in barrel, aged ~18 months in French oak.
