Tasting Note

Shows concentrated blackcurrant, black cherry, graphite, tobacco and sweet spice, with firm grainy tannins, mineral lift and a very long polished finish.

Roast lamb, beef côte de boeuf, venison, aged hard cheeses; Asian: Peking duck, char siu (BBQ pork), Korean bulgogi, soy-braised short ribs.


Production Method

Hand-harvested, temperature-controlled maceration (30–40 days), malolactic in oak; aged ~16–18 months in French oak (c.60% new) with parcel selection.
