Tasting Note

Concentrated blackcurrant, blackberry and plum with graphite, tobacco, mocha and toasted oak. Full-bodied, dense core of ripe fruit, polished grainy tannins, bright backbone and a long, savory finish.


Food Pairing

Western: roast beef, leg of lamb, duck confit, grilled ribeye, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi), braised beef short ribs, Sichuan beef.


Production Method

Hand-harvested and sorted; fermented in temperature-controlled vats; matured ~18 months in new French oak (gravity transfer, modern cellar techniques).
