Tasting Note

Concentrated blackcurrant and plum, graphite and truffle notes with tobacco, smoky ember and cedar. Medium–full body, ripe yet grippy tannins and a long, savory finish.

Western: roast lamb, grilled ribeye, beef stew, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi), teriyaki beef skewers, Sichuan-style beef.


Production Method

Hand-harvested; traditional fermentation in vats, destemmed; aged ~16–18 months in French oak (majority new), élevage to integrate oak.
