Tasting Note
Full-bodied, layered black-fruit core of cassis and black cherry with violet and truffle florals, cocoa, licorice and cedar. Silky texture, lively acidity and refined, mouthcoating tannins; long, mineral-tinged finish.
Food Pairing
Western: roast lamb, beef tenderloin, duck confit, aged hard cheeses (Comté, Manchego). Asian: Peking duck, char siu, Korean BBQ (galbi/bulgogi), braised beef short ribs, umami-rich mushroom hotpot.
Production Method
Hand-harvested; fermented in temperature-controlled vats with gentle maceration. Aged ~20–22 months in oak (50–60% new) and large foudre. Estate practices are organic/biodynamic.

Château Palmer, a 3ème Cru classé (1855) in Margaux. Co-owned by the Sichel and Mähler-Besse families; led by Thomas Duroux. Estate converted to organic/biodynamic viticulture (Demeter certified from 2017).
