Tasting Note

Deep black-fruit core of blackberry, blackcurrant and plum with cedar, violets, dark chocolate and brown spice. Fresh, mineral lift and velvety yet firm grainy tannins; very long, saline finish.

Steak frites, roast lamb, beef ribeye, aged cheeses; duck (roast or Peking), mushroom risotto, soy-braised short ribs, char siu, Korean BBQ.


Production Method

Hand-harvested; biodynamic practices; native-yeast fermentations with minimal SO2 at crush (2017); gentle extractions; élevage ~18 months in approximately 65% new French oak.
