Tasting Note

Dense purple; aromas of blackberry, cassis, licorice, incense and saddle leather. Full-bodied, rich and layered with ripe, sweet tannins, cedar/oak spice and a long, persistent finish.

Western: roast lamb, ribeye beef, duck confit, mushroom risotto, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi), spicy Sichuan lamb, miso-glazed dishes.


Production Method

Hand-harvested, destemmed and fermented in temperature-controlled vats; matured ~18–21 months in French oak (≈45% new), with malolactic fermentation.
