Tasting Note
Perfumed and spicy: wild thyme, violets, leather, dark cherry and plum with savoury anise notes. Silky, fine tannins, medium body and a long, savory finish.
Food Pairing
Western: roast rib‑eye, beef stew, mushroom risotto, aged hard cheeses. Asian: Peking/roast duck, char siu or Cantonese roast pork, Korean BBQ (bulgogi), miso glazed salmon.
Production Method
Hand‑harvested, cold soak, native (wild) fermentations with a small whole‑cluster inclusion (~5%). Aged ~10 months in French oak (c.34% new), underwent malolactic, lightly fined and bottled under screwcap.
