Tasting Note
Perfumed and herbaceous: passionfruit, guava, white peach, lime zest, fresh-cut grass and green capsicum with wet-stone/mineral notes. Dry, textured, crisp and long with a chalky finish.

Western: oysters, grilled white fish, crab ceviche, goat cheese, tomato-mozzarella-basil bruschetta. Asian: sushi/sashimi, Vietnamese spring rolls, seafood stir-fry, Thai green curry (lighter preparations).
Production Method
Hand-harvested, cold-settled and fermented in stainless-steel; 4–6 months lees contact for texture; bottled young to preserve aromatics.
