Tasting Note
Savoury, structured and layered: black and red cherries, raspberry, mulberry, dusky florals, anise and fresh hay. Silky mid‑palate with black-forest fruit and dried‑herb complexity, long, elegant finish.

Western: roast duck, butterflied lamb, venison, mushroom risotto, pork belly. Asian: Peking duck, char siu, teriyaki duck, mushroom ramen, grilled salmon (teriyaki).

Production Method
Hand‑harvested estate fruit (Hua Nui, Winery, Pencarrow); ~5% whole‑cluster; open‑top fermentations with gentle extraction; matured ~10 months in French oak barriques (proportion new).
