Tasting Note
Cool-climate Chardonnay with lemon zest, white peach and orchard fruit, creamy lees texture, subtle vanilla and toasted oak, saline/mineral thread and vibrant acidity leading to a long, refined finish.
Food Pairing
Roast chicken, seafood risotto, grilled white fish, pork belly; Asian: miso-glazed black cod, tempura, sashimi (fatty cuts), milder Thai green curry.
Production Method
Hand-harvested, whole-bunch pressed; barrel-fermented in French oak (portion new), indigenous yeasts, 8–10 months on lees with occasional bâtonnage before bottling.
