Tasting Note
Silky, layered Chardonnay with lemon meringue, poached pear, fresh pineapple and crushed granite; subtle oak and richer notes of butterscotch, almond cream and crème brûlée. Bright acidity balances a creamy texture and a long, playful finish.
Food Pairing
Western: grilled pork chop with mustard-thyme cream, roasted chicken with Meyer-lemon pan sauce, aged Gouda and roasted potatoes. Asian: miso-glazed black cod, seared scallops with ponzu, rich sushi/white-fish nigiri, and mildly spiced Thai green curry with chicken.
Production Method
Hand-harvested fruit, whole-cluster pressed, juice settled then fermented ~45 days; fermented and aged in French oak with 100% malolactic fermentation and lees stirring; bottled without fining or filtration.
Vineyard Info
Founded by Jayson Pahlmeyer (1986); fruit from select Napa Valley sites including Waters Ranch and other estate/contract vineyards. Pahlmeyer built a reputation for concentrated Bordeaux-style wines; brand sold to E. & J. Gallo in 2019.
