Tasting Note
Plush, full-bodied Napa cabernet with ripe blackberry, black currant, red licorice, dark forest-floor and cracked pepper; polished but grippy tannins, vanilla and toasted hazelnut on a long, spicy finish.

Food Pairing
Western: grilled ribeye, braised short ribs, roasted lamb, aged cheddar. Asian: Korean BBQ (galbi), char siu pork, Sichuan-style beef, Peking duck, beef teriyaki.

Production Method
Selected mountain and valley-floor lots fermented in small lots; aged ~15 months in ~80% new heavy-toast Taransaud French oak to build texture, structure and polished tannins.
