Tasting Note
Dark, expressive blackberries, anise and Castelvetrano olive; plush mid‑palate of blueberry jam and warm vanilla, firm tannins and a lengthy, loamy finish.

Western: grilled ribeye, braised short ribs, roasted lamb, aged cheddar. Asian: Korean BBQ (bulgogi/galbi), Cantonese char siu, spicy Szechuan beef or mapo tofu, Japanese teriyaki or wagyu beef.

Production Method
Night-harvested, hand-sorted and gently de-stemmed; cold maceration, 2–3 week fermentation, basket-pressed, malolactic in barrel, aged 17 months in 70% new French oak.
