Tasting Note
Concentrated black cherry and blackberry with violet florals, tobacco, spice and mineral lift. Voluminous, intense palate, fine polished tannins and a long savory finish.

Food Pairing
Western: roast lamb, grilled beef, venison, aged Manchego and hard cheeses. Asian: Peking duck, char siu, Korean barbecue, braised beef short rib, umami-rich mushroom hot pot.

Production Method
Hand-harvested, manual destemming and foot-treading; cold pre-fermentative maceration; fermented in small 10 hL oak tinas; malolactic in new French oak; aged 16–18 months in new French Bordelaise oak.
