Tasting Note
Deep cherry and black fruit (blackberry, plum) with notes of licorice, tobacco, cedar and vanilla; firm, ripe tannins, mineral backbone and long, savory finish.

Food Pairing
Roast lamb, grilled steak, game and aged Manchego; mushroom risotto, beef stew. Asian pairings: Peking duck, char siu pork, Korean BBQ beef, beef rendang, spicy Sichuan dishes.

Production Method
Hand-harvested Tempranillo; 100% destemmed, fermented in oak vats, malolactic in new French oak; aged ~16 months in new French oak followed by tank rest, then bottled (Dec 2021).
