Tasting Note
Concentrated dark cherry and blackberry with cocoa, leather, cedar and tobacco. Full-bodied, creamy texture, ripe rounded tannins and mineral backbone with a long, spicy finish.

Food Pairing
Western: roast lamb, grilled ribeye, aged Manchego, mushroom risotto. Asian: Peking duck, Korean BBQ (bulgogi), char siu pork, teriyaki beef.

Production Method
Hand-harvested, 100% destemmed, cold pre-fermentation maceration, traditional fermentation, malolactic in French oak; ~18 months in new French (Bordelais) oak, bottle-aged before release.
