Tasting Note
Ripe black cherry and blackberry with slate, graphite, cedar and spice. Medium–full-bodied, vibrant acidity, fine polished tannins and a long, mineral-tinged finish.

Food Pairing
Roast lamb, grilled beef, aged Manchego, chorizo; Asian: Korean BBQ (bulgogi/galbi), char siu, Peking duck, spicy Sichuan beef.

Production Method
Hand-harvested Tempranillo from Finca El Puntido; fermented in stainless steel/concrete and aged ~16 months in new French oak barrels with periodic rackings before bottling.

Viñedos de Páganos (Eguren family/Sierra Cantabria) near Páganos/Laguardia. Old vines (planted c.1975), low yields and parcel selection focused on terroir-driven Tempranillo.
