Tasting Note
Deep ruby; ripe blackberries and plums, chocolate oak notes, fresh acidity, polished round tannins and a long, persistent finish.

Food Pairing
Western: grilled/roast red meats, steak, lamb, roast beef, aged cheeses. Asian: Korean BBQ (bulgogi), Chinese char siu or braised beef, Sichuan-style beef, Japanese yakiniku, Thai grilled beef.

Production Method
Fully destemmed grapes; 9-day fermentation in 7-tonne granitic stone lagares with gentle pump-overs; malolactic in barrel; aged ~18 months in 2nd–3rd year French oak barrels.
